Facundo Bacardi started the revolution in the spirits industry in 1862 when he began production in 1862 in Santiago, Cuba. It is said that the bat in the Bacardi symbol comes from the fruit bats in the family distillery in Santiago. He was the first to try to soften the character of rum by filtering it through carbon filters, and the first to produce white rum. Today the Bacardi Empire operates from Puerto Rico.
