It was made to order for the famous French restaurant Maxim's de Paris in collaboration with a well-known house in Celles-sur-Ource in the Aube. Only privately owned grapes are used for its production, while its aging takes a much longer period of time than the law stipulates.
Maxim's Champagne is produced from the 3 main French varieties used in Champagne, Chardonnay, Pinot Noir and Pinot Meunier. The dominant Pinot Noir gives it its rich body while the Chardonnay gives it elegance and the Pinot Meunier complements its fresh aromas. Maxim's Champagne spends 12 months on its lees and 24 months in the house's cellars in the bottle before its release!
