These Maison Marc gherkins have been preserved in Champagne-Ardenne white wine vinegar to give them surprisingly sweet and sour notes and aromas. Still crunchy and supple, they are even finer and tastier than in the original recipe.

The remarkable work of Maison Marc, the last 100% French gherkin producer, is to be commended. While in the 2000s, almost all gherkin production was relocated to India or other low-cost countries, Maison Marc decided to resist and keep its production of fresh gherkins in the Yonne region where it had been established for a long time.
