Farmed salmon of more than 12 Kg. The entire elaboration process is carried out the traditional way, so in the cutting phase the bones are removed by hand, one by one. Smoking is carried out with natural smoke from Mediterranean pineapples, filtered and cooled until obtaining the particular aroma.
