It is produced from the traditional white grape variety of Santorini, Assyrtiko. The Gaia estate began to sink 450-500 bottles from each harvest into the sea in 2009. Down there in ideal constant temperature conditions, they are left to age away from light and oxygen.
Difficult and often adverse conditions. From the first harvest, only 3 of the 450 bottles that sank were recovered alive. But big ideas are not afraid of storms. So after continuous improvement of the process, a rare hybrid wine was born, that meanders between the new but at the same time sophisticated character.
